Tomato Chutney Glazed Salmon

Our original Tomato Chutney has proven to be a perfect accompaniment for most dishes, be it meat, fish or vegetarian.


With our busy schedules, making a wholesome family meal can, at times, prove to be quite difficult. So we would like to share with you, our loyal customers, a recipe for a tomato chutney glazed salmon. We have found this meal to not only be one that can be thrown together at short notice, but is also a favourite amongst our family and friends.


Servings: 2 Prep Time: 20 mins Cooking Time: 15 mins


Ingredients

2 fillets of Salmon

(Optional - Salad)

4 Tbsp of ahas Dambulla tomato chutney

2 cups of mixed greens

2 tsp of chili powder

1/2 cup of walnuts (can be substituted with almonds)

1 Tbsp of olive oil

1/2 cup cherry tomatoes

2 tsp of dried herbs of choice (parsley, rosemary, thyme etc)

1/3 cup of dried cranberries

Directions:

  1. Pre-heat your oven to 180 degrees celcius.

  2. Place your salmon in a bowl and pat it with a paper towel to remove excess moisture.

  3. Mix all the ingredients separately in a bowl and then baste the salmon thoroughly with the mixed ingredients.

  4. Leave the salmon to marinate for 15 minutes.

  5. Wrap the marinated salmon in foil, place in a baking dish and place in the oven. Do not bake the fish for more than 12 minutes.

  6. Toss the salad ingredients in a separate bowl with a dressing of your choice.

  7. Serve the baked salmon on top of the tossed salad.

  8. Add an extra teaspoon of chutney on top of the salmon as a garnish.
